The women behind Little Flowers – Part Three, Theresa Tran

It was International Women's Day this week. Perfect timing to introduce you to some of the fabulous women on the Little Flowers team, past and present, and tell you about their creative endeavours out...

Theresa not only makes beautiful bouquets of flowers, to be delivered across Sydney for you, she also creates quite possibly the most delicious cakes on earth. And we do not say this lightly. Talk to us a bit about your role at Little Flowers

I’m a florist creating the daily bunches for our lovely customers. I really wanted to work with beautiful flowers and the team and vibe at Little Flowers is so fun! There’s a great atmosphere – so much love and fun times. We all look out for each other. And being surrounded by all the flowers, it never gets old. There is just so much beauty in flowers, it’s great to be able to work with them all day and create beautiful bouquets that get delivered across Sydney to make people happy.

 

Have you ever sent Little Flowers? Or received a Little Flowers delivery? 

Yes – I’ve sent a few flower deliveries in Sydney to friends for various reasons. I’ve sent during Covid, to say congratulations and to wish them happy Christmas.

 

Tell us about your cakes. What made you interested in baking?

I create luxury bespoke cakes for all occasions, from weddings and engagements to christenings and birthdays. I grew up baking with my sisters and I started my working career as a pastry chef and decoration was my favourite part of the job. It felt like a natural progression for me to go into cake decorating.

 

What’s your journey been like so far?

I studied Patisserie and went on to work as a pastry chef at a few hotels and patisseries. I now split my time between baking and decorating cake orders as well as working 2 other jobs, one of them being at Little Flowers! So my average week is a big juggle most of the time!

 

What’s your favourite type of commission? 

I love modern romantic designs and also to be given free reign on my designs, oh and all of the fresh flowers.

 

What’s been your greatest achievement so far? 

Being able to run a cake business on my own and to be able to create cakes for a job is pretty fantastic.

 

Are there any challenges that come with your role? 

There are always challenges in some form or another. The biggest challenge for me is keeping the work life balance. It’s easy to get bogged down with all the different aspects of running a business on your own. You literally are the one doing every single thing, aside from the baking and decorating, there is the admin, accounting, social media, cleaning, ordering ingredients and materials and much more. And of course there’s the delivering – it’s like flower delivery, it has to be done with a lot of care and there’s sometimes time pressure. But when my clients come back to me and say how much they loved their cake, that makes it all worth it. 

If you were cooking a cake for yourself, what would you make and why? 

I don’t think I would make a cake for myself anymore, there are too many cakes out there to try! I love Asian flavours though, anything with yuzu, matcha or hojicha and I’m there. 

 

What would be a dream commission? 

I’m not sure I have a dream commission yet. But whenever a client just trusts me and gives me full design control, that’s definitely a big YES from me.

 

Do you have any advice or someone just starting out in the cooking/baking world?

Try and make a few friends/connections with others in the industry. Cake decorating can be quite isolating at times as most are sole traders so it really helps to have someone who knows what you are going through and to have a supportive community.

 

Do flowers ever inspire your baking, or get incorporated in some way? 

Yes, I love decorating my cakes with flowers, they adorn almost all of my cakes. Floral flavours are also really delicious, I even have a jasmine scented cake and rose scented cake on my menu currently. 

 

Do you have a favourite flower? Does it change with the season? 

Peonies used to be my favourite and still do love them, but now there are so many flowers out there I find it really hard to pick just one. I was loving sweet pea when they were in season, the scent of them is just something else.
